This month's winesip is the noble Cabernet Sauvignon known to be a powerhouse of a wine. Some tasting notes to contemplate:
Tasting aromas-ripe black cherry, spicy plum, vanilla bean, toasty oak
Flavors-chocolate, blackberry, cocoa, spice
Textures-supple tannins, round, long vanilla or velvety finish.
Pairings-Cabernet works exceptionally well with lamb, duck and wild game and is perfect for Bleu and Reggiano cheeses. Also this is a wine that drinks very fine on its own.
